-King Kong
-TMNT
-Avatar
-Fight Night Round 3 (this one's actually a good game, too)

Those are probably the 4 easiest, or close to it.

Everyone says Fight Night Round 3 is easy achievements but you know what? I found that game to be really hard so only got like 1 or 2 achievements before eventually trading it in. Perhaps i'm just getting old.

X-Men was another one which was supposed to be easy but i'm stuck halfway through the game and got hardly any points so far.

Avatar is by far the easiest. King Kong, TMNT etc.

Oh, and a fun game which you get lots of achievments from playing normally without being a whore about it is Scene It! Me and the mrs enjoy that game, get a couple friends over and lash out a few rounds of movie trivia.

May not get your gamerscore quick but Crackdown is great fun with a friend for GP

a bit off topic, but
what kind of multiplayer does crackdown have (offline)?

It is a co-op mode where you can link with 1 of your friends over live. There are a couple of challenges(i.e. the rocket tag challenges) that can only be done while in co-op.

Also, Assassin's Creed is a game that you can get a lot of the achievements by beating the game. The game is really repeatative and it does get boring over time but it does have a pretty good story. I beat it in about 2 days and have gotten over 700 gamerscore points in it.

I played the game on Medium and it never got too challenging. Never lost a match.

On Easy, you can fly through the 1000 Gamerscore in about 5-6 hours. And have fun doing it, too.

It can also be done via split-screen. And it's a helluva lot of fun.

I didn't know that. I did try to play co-op on the same console once but it didn't let me.

That's odd. Worked for me.

I've been playing Half-Life 2: The Orange Box and I've found a lot of the achievements to be storyline based, so if you like Half-Life 2 and the episodes, and Portal then its a great game for achievements. I've gotten a lot without even trying. I'm up to somewhere like 477 so far, and I haven't started Episode 2 yet.

But there are over a hundred of them... The Orange Box is a great game (or set of games) by any standard, but getting all of the Achievements for it would not be quick and easy like Geotraka is looking for.
