I was thinking about a lot of these and the majority of my exposure to certain game genres came suprisingly late. I know we have people of all ages at this forum, so I'd be interested to know when people were exposed to what type of games.
RPG: I guess technically Sword Of Vermillion for the Sega Genesis. I watched my bro play it a lot, and once in a while I'd play as the character he had saved right before he fought the final boss, so I'd go around killing everything pretty easily, talking to everyone in every town and city, and fighting the final boss again and again.
I don't really count that, though. The first RPG I played all the way through was Final Fantasy VII. I hadn't played any of the previous ones since we never had an SNES, and even though I had basically no experience with RPGS, for some reason I was unbelievably excited for it. My brother had pre-ordered it, and I would ask him every single day if he had picked it up for about a week. I watched him play it pretty much every time he turned it on, and after he got pissed off at some part for a while, I'd play it. I think at one point I put in about 18 hours in one day.
FPS: Doom, I guess? My friend had it and I never touched it but I watched him play. At the time it seemed unbelivably hard to me, so I was content to just watch.
The first one I really played was, of course, Goldeneye. Doom honestly hadn't excited me for FPS games, and as soon as I got an N64, my bro insisted on buying Goldeneye for me. I said okay, no expecting much, and then continued to play it nonstop, both single and multiplayer with him for several days.
Feel free to add all the other genres. I'm flying too high on past memories to add more at the moment.
Platformers: First time was with super mario bros., oh how I would spend countless hours in front of the old T.V so close my eyeballs were practically touching the screen.
FPS: I'd have to say it was Doom but it wasn't until counter strike that I really developed a taste for the genre... as a side thought does duck hunt count as an FPS or on rails ?
RPG: My first time was with final fantasy 7, never completed it though.
and as for the other genres, I honestly can't remember right now which games were my first experience.
FPS - Halo 1 on Xbox
RPG - Knights Of The Old Republic
Racing Arcade - Need For Speed 2
Racing Simulation - Forza 2
Platforming - Donkey Kong Country
All of them I was like "OH. MY. GAWD...BEST GAME EVER!!"

I've finally gotten into Fallout 3...just the 13 months late there then.
RPG
Pokémon Yellow, probably, in sixth grade. I don't remember playing anything before that RPG-related. I saw an episode of Dexter's Lab where they were playing D&D, and thought that looked really awesome, but game-wise it was Pokémon.
FPS
Probably CoD2. My school's network had a copy floating around, and we'd have impromptu LAN parties until someone told us to stop. I didn't ever really pay attention to FPSs until recently, with COD4 and such. It's not my favorite genre, and I HATE playing them on consoles, but I love FPSs on the PC with RPG elements.
Racing
Either Gran Turismo (PS) or Mario Kart (N64). The former I owned, and the latter I played at friends' houses.
Can't think of anything else at the moment.

RPG: Final Fantasy back on the NES. The first one in the series brought me into the genre.
FPS: Doom was the first one I played but Medal of Honor, Call of Duty and Halo brought me into the genre. I also was heavily into Time Crisis in the arcades. Spent many a coin there.
RTS: Blizzard wins here. Warcraft then they got me on Starcraft. The best way to enter the genre in my opinion.
Racing: Pole Position and an arcade game by the name Hydro Thunder.
RPG - Pokemon Red (or blue, can't remember) That was my favorite game for awhile. I know it's not really my first RPG, but it's my first memorable one.
Platformer - Sonic 2, I never had a NES or SNES, I was always a SEGA kid, and damnit I liked it.
FPS - Doom on the PC, played it on my brothers PC when he wasn't looking.
RTS - I give this to Sim City, and yes it was real time, and it took a lot of strategy.
Racing - I have no clue on the name.
I also want to give a shout out to Oregon Trail, best game ever.
